Cheese, especially blue cheese, is one of our favorite things! Our family crumbles it on salads, we melt it on burgers, and we add it to flat breads...but our favorite way to use it? Steak, Blue Cheese and Oregon Berry Crostini Bites! And the specific blue cheese we love for this recipe? Rogue Creamery Oregon Blue!
We teamed up with our friends at Rogue Creamery for this appetizing and crowd pleasing recipe! First created in 1954, Oregon Blue was the first cave-aged, Roquefort-style blue cheese made on the West Coast. It's creamy, fruity, approachable and ideal for pairing with sweet, acidic Oregon marionberries and raspberries found in our Raspberry Marionberry Fruit Spread! These are honestly some of the best appetizers we've ever made! Grill the steak outside, or pan fry it on the stove to the perfect doneness. These bites are enough to make a meal out of on their own, too!

Steak, Blue Cheese and Oregon Berry Crostini Bites
Ingredients

8 oz top sirloin

1 tbsp butter

1 white onion, thinly sliced

1 green bell pepper, thinly sliced

Salt and pepper, to taste

French baguette, cut into slices

Olive oil
Directions
Note: You can also do all of this on the grill, making it perfect for summer gatherings!

Heat a skillet over medium high heat and add a drizzle of oil. Lightly salt and pepper your sirloin.

Place into the skillet and cook until medium rare, about 2 minutes per side. Alternatively, cook until desired doneness is reached. Let rest 10 minutes and then thinly slice.

Heat a large skillet over medium heat and add the butter, white onion, bell pepper, and a pinch of salt and pepper.

Saute for about 20 minutes until caramelized, stirring frequently.

Heat the oven to broil and line a baking sheet with parchment paper.

Gently rub oil on the slices of french baguette and place on the prepared baking sheet.

Broil for about 2 minutes until crispy, flip, and broil for another 1-2 minutes. Keep an eye on things, because these can toast more quickly, depending on your oven!

To assemble, spread a thin layer of Raspberry Marionberry Fruit Spread onto the crostini. Follow with desired amount of blue cheese, a thin slice of cooked steak, and top with the caramelized onions and peppers.

Serve immediately!
