It's feeling a little more like spring every day on the farm! Rain showers, daffodils, blooms and...rainbows! It's such a beautiful time of year and we try to savor each season while it's here. The view below is one of my favorites from the pasture, and it helped inspire us to make an Eat the Rainbow Grazing Board.
We used our Heritage Apple Fruit Spread as our 'pot of gold' at the end of the rainbow. It's one of those accoutrements that goes great with sharp cheeses, fresh fruits, or on a plain cracker.
With a quick trip to the store, or maybe with what you have on hand, you can put together this kid friendly grazing board. Here's what we used, but you can substitute other fruits and vegetables that go along with the color scheme:
- Red: Fresh strawberry halves was our choice. But, you could use fresh bell peppers, raspberries, or red apple slices.
- Orange: sliced oranges, orange bell peppers, cubed cheddar.
- Green: sliced cucumber, green grapes.
- Blue: blueberries.
- Purple: halved purple grapes and blackberries.
- Crackers of choice for the bases of the rainbow.
- Pot of Gold: Heritage Apple Fruit Spread.
Pro tip: it's easier to shape the rainbow if you use a round board or serving platter, but you don't have to have one.
