It's officially fall...but it's still going to be 80 degrees today! Weather like this calls for a tropical drink, so we came up with an easy Spiced Marionberry Pina Colada cocktail recipe. Marionberry and cinnamon add a touch of warmth to this icy, refreshing drink. Enjoy!
Ingredients - Makes 2 Servings
- 2 cups fresh pineapple
- 1⁄2 - 1 cup of canned full-fat coconut cream
- 4 oz rum- we love 4Spirits Distillery!
- Juice of 1 lime
- 2 tbsp Mt. Hope Farms Spiced Marionberry Fruit Spread
- 2.5 cups ice
In a high speed blender combine pineapple, 1⁄2 cup coconut cream to start, rum, lime juice and ice. Blend until smooth. If you like your pina coladas thinner, add another 1⁄2 cup of coconut cream.
In your serving glasses put 1 tbsp of the Spiced Marionberry Fruit Spread at the bottom of each glass.
Pour the pina colada in your serving glasses and swirl the spiced marionberry with a spoon and enjoy!
